Role Overview
LION is hiring an experienced Distiller to join the Production team in Healesville, Victoria on a permanent full-time basis. This role is suited to someone who already has solid distilling experience and is ready to advance their career within a major Australian beverage business.
Position Summary
Reporting to the Head Distiller and Production Manager, you will help create award-winning spirits while keeping every batch aligned with the high-quality standards the business is known for. The position covers the complete production cycle, including mashing, distillation, blending, quality control, packaging support and continuous improvement work.
The job is very hands-on and varied. You will work closely with the broader production crew, contribute ideas to streamline processes, and help sustain a safe, efficient and high-performing distillery.
Key Duties
- Run stills and support the manufacture of spirits.
- Prepare botanicals, raw materials and production tools or equipment.
- Track distillation runs and keep detailed, accurate production records.
- Carry out quality inspections throughout production.
- Help with blending, bottling and packaging when needed.
- Complete cleaning, sanitation and routine maintenance tasks.
- Uphold strict food safety, quality and workplace safety standards.
- Assist with stock handling and inventory control.
- Look for ways to improve efficiency and production methods.
- Cooperate with the production team to meet daily output goals.
About You
You should bring practical distilling or beverage production experience and be comfortable in a fast-moving manufacturing environment where quality matters. A strong attention to detail, a hands-on approach and pride in producing an excellent product are essential.
Requirements
- Background in operating distillation equipment or similar beverage manufacturing processes.
- Sound understanding of quality systems, hygiene standards and food safety practices.
- Strong attention to detail and a focus on consistency.
- Ability to identify issues, troubleshoot and act proactively.
- Good organisational skills and the ability to juggle priorities.
- Team-oriented mindset with willingness to support others.
- Current forklift licence, or willingness to obtain one, is an advantage.
- Interest in craft spirits, innovation and ongoing learning.
