Role overview
Prancing Pony Brewery is seeking an experienced Brewer to become part of its production team in Totness, South Australia, within the Adelaide Hills. This is a full-time, on-site opportunity for someone who enjoys a practical brewing role and wants to contribute to an independent craft brewery with a long-standing reputation for quality.
The brewery has been operating for 14 years and is known for making award-winning beer while maintaining a workplace grounded in respect, integrity, teamwork, diversity and a sense of humour. The role reports closely to the Head of Brewery Operations and involves working across the full production cycle, from raw materials through to packaged product.

Key duties
This position is hands-on and covers the complete brewing process. You will work on a modern 32hL German Braukon brewhouse and support production across brewing, cellar work, packaging and related operational tasks.
- Carry out brewing and wort production activities
- Manage yeast and keep fermentation under control
- Perform cellar tasks such as transfers, dry hopping, fining and carbonation
- Support packaging work, including kegging and canning
- Maintain cleanliness, sanitation and overall brewery hygiene
- Complete quality checks and keep accurate production records
- Handle inventory control, ordering and stock monitoring
- Arrange collection of spent grain
- Take part in occasional brewery tours and interact with visitors
- Represent the brewery at industry events, festivals and promotional activities
What the role calls for
The ideal applicant is enthusiastic about brewing, focused on quality and comfortable working in a team-based environment. In addition to technical brewing knowledge, the role requires strong organisation, attention to detail and a willingness to keep learning.
- At least 3 years of experience in a commercial brewing environment
- Brewing qualification at Certificate level or an equivalent credential
- Good organisational ability and a careful approach to detail
- Experience maintaining accurate production documentation
- Confident computer use, including Excel and Word
- Familiarity with Beer30, Fishbowl or a similar MRP system is an advantage
- Current RSA certification
- Current driver's licence
- Current forklift licence
- Positive attitude and strong communication skills
- Open-mindedness and willingness to learn
